I love this winery and its another great wine. From over 150 year old unirrigated Assyrtiko vines, 80% unoaked and fermented in stainless steel, 20% in French oak, low yields, sandy, volcanic soil. Citrus and stone fruit, saline notes and stony minerals. Really crisp and dry, weighty and mouth-filling with such a pronounced minerality, like licking a rock. It's got texture and weight and is simply delicious, crisp acidity making this super-fresh. Just needs high quality fresh fish to show its best.
