Cayo Hueso Rooster is a descendant from roosters bred in Cuba and the Keys for fighting.  Rooster fights are no longer legal in the United States so because of this, many were set free on the island.  Also nicknamed "Gypsy Chickens", they are protected and help add to the Key West charm that makes it unique and fun. If you love the Florida Keys than you love Los Cayos!
